What do you eat? Hell, I eat FOOD.

My last two post have been a bit heavy, so I am going to lighten it up a bit. I get asked all the time, what do you eat? Hell, I eat FOOD.  Many people have this misconception that when you are Plant-Based all you eat is salads, that couldn’t be the farthest from the truth. Unfortunately, many of us center all of our meals around meat so the removal of it makes us think it’s nothing else.

Plants and grains can give us everything we need and they taste good, not to mention there are Plant-Based substitutes for EVERYTHING. Meat and meat products are not as necessary as we think. I don’t feel like I am missing anything eating a Plant-Based diet, however
there are certain things I absolutely have to have in my kitchen.

My staples (must-haves) items are:
Brussel sprouts (I gotta have them)!!
Corn
Green beans
Greens (kale, turnips, mustard)
Tomatoes (Cherry and Beefsteak)
Lettuce
Onions
Peppers
Avocados
Beans (Chickpeas, black beans, lentils are my favs)
Rice
Pasta
Tortillas (corn or flour)
Fruit (Whatever is in season)
Lemons
Almond Milk
Nut
Olive oil
Seasonings (garlic powder, onion powder, curry, Sazon seasoning)
As long as I have these items, I can make different meals for weeks.

My reason for becoming Plant-Based, was purely health driven. I was tired of feeling horrible and unhealthy. Now, my entire family are meat eaters, I am the only one in my family that eats this way. I don’t force my way of eating on them, however I do encourage healthier options and they are receptive to that.
I cook often, but my meals are typically very simple and  usually require less than ten ingredients. Since eating Plant-Based, I don’t feel the need to count calories or fixate on the scale. I believe what you eat should make you feel good and not tired and run down.
Now let me say again, although I do have opinions about certain diets my overall goal is to educate and for people to be their healthiest selves.

Remember what you put in your body is more important than what you put on your body. Your body is the most complex machine in the world, taking care of it is vital to every aspect of your life.
